Quick Chocolate Cake

I must admit, this is probably one of the first cakes which I have tried to bake as a kid. I have always loved chocolaty cakes, and I always come back to this delicious quick and easy recipe when I want a sentimental bite of childhood. It not only requires very few ingredients, but you also will not have to flip your whole kitchen around to make this sweet treat 😉 . You can also decorate it in countless ways for many occasions (inspiration pictures on the bottom of the page).

The recipe for Delicious Quick Chocolate Cake

For the corpus you need: 

Note: 1 cup = 250ml / 8.45 oz

  • 1                  egg
  • 1      cup     milk
  • 1/3   cup     oil or melted butter
  • 2      cups   all-purpose flour  
  • 1/2   cup     sugar 
  • 1/2   cup     cocoa powder
  • 1      tbsp    baking powder 
  • 1      tbsp    vanilla sugar
  • 1      tbsp    cinnamon
  •          pinch of salt

+ a bit of oil/butter and flour or cocoa powder to line the baking pan

To spread on top of the cake: 

  • Small jar of jam – I prefer to use one with a bit of sourly taste such as blackberry jam to balance the sweetness. But I have tried many other jams as well and they tested delicious anyway. 🙂
  • 1       bar    dark chocolate
  • 3       tbst    butter 

It could not be easier:

Preheat oven to 180 °C / 356 F

To prepare the corpus, use a whisk and mix together all dry ingredients. Once everything is combined, add the egg, oil and milk. Whisk the mixture until you don’t see any flour pockets anymore. 

Use smaller baking pan with taller sides. Use paper kitchen towel to spread oil around the bottom and sides of the pan. Then pour in a bit of flour and move it around in the pan co cover all sides. Discard leftover flour. Pour in the mixture.

Bake at 180 °C for approximately 25 minutes. Press with your finger on top of the cake to find out if it is nice firm and baked inside, or use a good old trick with sticking a wooden toothpick in the middle of the cake. If it comes out clean, the cake is fully baked. Once the cake it baked, set it aside and let it cool. 

Once the cake is room temperature, spread the jam over the top. Then melt chocolate and butter together in a bowl – either on low heat in microwave or in a warm water bath. And pour the chocolate over the jam layer. Spread it with a spatula or a spoon. 

Endless options:

You can serve this cake while still warm with melted chocolate with a scoop of vanilla ice-cream, or chilled with serving of fresh fruits and a scoop of whipped cream. Either way, it will surprise you how delicious this super easy cake can be. 🙂
